This recipe is a vegetarian lasagna with homemade spinach pasta, scamorza cheese, spinach, and finished with mornay sauce. This is a great alternative to the classic tomato and meat lasagna but still gives a meaty texture with the mushrooms. Obviously if you don’t want to make the spinach pasta you can easily use the store bought dried version. Here is the best spinach lasagna recipe I hope you enjoy it.

Recipe Ingredients

Spinach Lasagna

Spinach pasta sheets par cooked see recipe

1 lb scamorza cheese sliced

4 cups mornay parmesan sauce see recipe

1 cup bread crumbs

1 lb of cremini mushrooms sliced

1/2 onion diced

1 lb of baby spinach

2 tbsp of butter and olive oil

3 tbsp chopped basil

Recipe Instructions

How to make spinach pasta,

Take two bunches of spinach and blanch in boiling salted water for 15 seconds and then strain out and place in an ice bath to cool.  After the spinach is cooled take it out of the ice bath and squeeze as much water out of the spinach as possible.  Place the spinach in a blender with the eggs and olive oil.  Puree everything until smooth and bright green.  Pour the mixture into the center of a bowl.  Place 3 1/2 cups of flour around the outer edge of the spinach in the bowl.  With a fork stir the flour into spinach mixture until it starts to form a ball of dough.  Then use your hands to form the dough.   Add more flour if the dough is wet.  Knead the pasta for 5 minutes and then cover and rest for at least 30 minutes.

Take your pasta and cut in half. Leave one half covered while you work with the other half. Take one half of the pasta with a rolling pin and roll until the dough is thin enough to fit inside the biggest setting on your pasta machine. Then run the pasta all the way down to the lowest setting twice. Then on the third time run it down to the second to last setting. Then cut 1 1/2 ft long sheets. Once you have your sheets blanch them in salted boiling water for 10 seconds and place in a ice bath to shock the cooking process.

How to make lasagna filling

In a large saute pan add olive oil, butter, mushrooms and cook for 5 minutes. Then add onions season with salt and pepper and cook for 2 minutes. Then add the 1 lb spinach and cook for 3 minutes until the mushrooms are tender. Then completely cool, once cool add the fresh basil

How to assemble the lasagna

In a small baking dish or even a loaf pan add a spoonful of mornay sauce in the bottom of your pan. Then add one sheet of lasagna. Then add a few slices of scamorza cheese and then a layer of spinach and mushroom mixture. Then add another sheet of pasta, mornay sauce, cheese, and spinach. Continue the same process until you pan is filled to the top. Then top the top layer with a good helping of mornay sauce. Top with panko bread crumbs and place in a 375 degree oven for 25-30 minutes. Take our and serve with mornay or alternatively you can cool completely, cut individual slices and the reheat to order what you need. Serve and enjoy!
