Try this Burrata Recipe with Kalamata olive sauce!
Nothing extravagant about this recipe other than delicious burrata cheese with two different olive sauces. Sometimes it is the simplicity of a dish that makes it amazing. Obviously you could save yourself the trouble of making the sauce and having chopped olives or a tapenade but you will see that these sauces take about the same amount of time as a tapenade.
All you need is some nice pan seared bread in olive oil and butter with a little salt on it. Then add the burrata and olive sauces and you have one of the best tasting appetizers around. Here is the recipe I hope you enjoy it!

Burrata with Green and Kalamata Olive Sauces

Olive Sauces
- 4 tbsp Castelvetrano Olive Sauce
- 4 tbsp Kalamata Olive Sauce
Burrata
- 8 oz Burrata Cheese
Garnish
- 1/4 tsp salt (and pepper)
- 1 tbsp chive (blossoms)
- 2 tbsp olive oil
For the Green Olive Sauce

Place water, olives, chives, garlic into a vitamix. Turn the vitamix on and puree until smooth. Add the olive oil in a slow steady stream. Then add the xanthan gum in the same slow and steady stream.
Puree for another 15 seconds and then turn off the blender. The sauce should be thickened slightly. Place in a container and set aside.
For the Kalamata Olive Sauce

Simply drain the burrata and place on a plate. Drizzle with olive oil, salt, and pepper. Add the two olive sauces to the plate. Serve with some warm bread and enjoy!
