Easy Edamame Guacamole Recipe

Try this addictive and easy edamame guacamole recipe that just takes minutes to make and seconds to eat.  Everyone will love the clean eating snack!

Who doesn't like guacamole? And who doesn't like edamame soy beans (Try this edamame salad)? Why not combine the two together to make a power protein dip. Easy, filling, and absolutely delicious!

This recipe can be made in about 15 minutes and can last a few days if it doesn't get eaten first. I love to eat this guacamole dip with vegetables, raw or cook, and/or chips or crackers. Perfect for anytime of year and any occasion.

I basically through everything into the food processor and pulse several times until everything comes together into a semi smooth guac. That is really all there is to this edamame guacamole recipe. I hope you enjoy it!

Edamame Guacamole

 

  • 5 medium Avocados
  • 1 cup edamame beans (blanched until tender)
  • 1 whole jalapeno (sliced (you can add 1 serrano too if you like spicy))
  • 1/3 cup cilantro (leaves)
  • 2 small limes (juiced)
  • 1 salt (to taste)

How to make edamame guacamole

  1. Blanch edamame beans in salted pot of boiling water for 2-3 minutes, until they are tender and soft all the way through. The immediatly place in an ice bath.

    Put jalapeno pepper and cilantro in food processor , puree first and chop fine for 15 seconds.  Then add blanched edamame beans and chop fine for 10 seconds.  Finish by adding avocados, lime, and salt.  Pulse several times to incorporate but don't puree into baby food. I like a little bit of texturw wih the edamame and the avocado. Adjust seasoning with salt. Serve and enjoy with your favorite chip, vegetable, or crackers.
