Zeppole are the perfect, Italian, end to a meal. Zeppoles, are a ricotta donut that are light and absolutely delicious! If you are one of those people that don’t like cheese in your desserts, don’t worry, you aren’t overwhelmed with cheese flavor. The cheese gives more texture than overwhelming flavor. Add citrus zest and vanilla bean and you a have perfect combination for a sweet treat at the end of your meal. They are super easy and don’t take much time at all to make! Recipe Ingredients
3/4 scant cup of flour
2 tsp of baking powder
1/4 tsp of salt
1 lemon or orange zested
1 vanilla bean or 1 tbsp of vanilla bean paste
3 tbsp of sugar
1 cup of fresh ricotta drained
2 eggs
3/4 cup powdered sugar
honey to drizzle
2 1/2-3 cups of oil for frying
Recipe Instructions
In a mixing bowl with a whisk combine ricotta cheese, eggs, sugar, vanilla, and salt. Mix well. Then add flour and baking powder and mix well. Place oil in a small pot and turn on medium to medium high heat. Using a small ice cream scoop, scoop the batter and drop carefully into the pot of hot oil. Cook for 2-3 minute until golden brown. Using a slotted spoon, scoop out zeppole and drain on a paper towel. Dust with powdered sugar. Continue the process with the remaining batter. Place in a bowl and drizzle with honey. Serve and enjoy!
