Broccoli Soup

Try this easy broccoli soup recipe with spinach and broccolini.  This broccoli soup is not only easy, but it is delicious!

There are some many things to love about this easy soup recipe. First it is easy to make, it also is easy on the wallet. It only takes a few ingredients and doesn't take more than an hour to make!

What's not to like about that! Another great thing about this recipe is there is no waste! Use the stems, use the whole crown! Now you could easily add cheese to this soup to make a broccoli and cheese soup but I opted for the vegan/vegetarian recipe.

You could easily make this an all broccolini recipe as well. I used me dutch oven from le creuset which is perfect for making this recipe

My whole family loves this recipe and I love it because I can make it in about 30-45 minutes. Feel free to add different flavors and herbs to it to make it a little more complex. Or just keep it simple.

Easy Broccoli Soup with Spinach and Broccolini

For the broccoli soup

  • 1 bunch (2 lb) broccoli (with stems)
  • 1 whole onion (sliced)
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 2 tsp salt
  • 8 cups water (or stock)
  • 1 lb baby spinach

Garnish

  • 1 cup broccolini (blanched)
  • 3 tbsp green onions
  • 1 tbsp olive oil

How to make broccoli soup

  1. Take your broccoli and remove the stems from the head. Slice all the broccoli stems the same size (1/8 inch thick). You should have about 3-4 cups of stems. In a medium sized soup pot ( I used my Le Creuset ) on medium heat add olive oil, broccoli stems, onion, and a tsp of salt. Cover the soup pot and cook for 10 minutes stirring occasionally (don't let the vegetables brown)

    Add the water and half of the broccoli crowns, bring to a boil. Cover and cook for 30 minutes. Then add 3 cups spinach to the pot and cook for 2 minutes. Transfer everything to a vitamix (in batches if need be) and puree for 1 minutes until bright green. Adjust the seasoning if need be.

To finish

  1. Simply add the broccolini to the soup and then portion them in each bowl. Garnish with green onions and olive oil. Serve and enjoy!
