This is my go to snack at least 3 times a week. There’s not too many snacks in my mind that are better! I might have a cheese addition because I probably eat cheese just about everyday.
Lavash is an Armenian style flatbread that can be used for any number of dips and sauces. This flatbread is very easy to make and can be done in a very short amount of time. I made this keeping with the mediterranean flavors with zaatar and dill.
I like to use my pasta machine attachment because it is fast, easy, and uniform, when it comes to the thickness of my flatbread dough. I would recommend the kitchenaid attachments if you have a kitchen aid otherwise you can try this pasta machine.
Take your lavash flatbread dough and with a rolling pin roll the dough thin enough to pass it through the largest setting of your pasta machine. Then work your way down a few notches until you get the thickness of the cracker that you that you like. I normally go down about half way through my pasta settings.

Lavash Flatbread
- 1 1/2 cups flour
- 1/2 cup water
- 3 tbsp olive oil
- 1 tsp salt
- 1 tbsp zaatar
- 2 tsp dill
Garnish
- 6 oz sheep's milk cheese
- 6 oz honeycomb
For the lavash flatbread

Preheat oven to 425 degrees.
In a small bowl add flour, salt, and spices. Make a well in the center of the flour and add oil and water. Take a fork and mix the wet with the dry ingredients until it forms a dough.
Once the dough is formed allow to rest covered for 20 minutes. I like to use my pasta machine attachment because it is fast, easy, and uniform, when it comes to the thickness of my lavash dough. Then place on a sheet pan and lightly season with salt. Place in the oven for 8-10 minutes until golden brown. Take out and cool completely. Place on a plate with cheese and honey. Serve and enjoy this simple pleasure!
