This Poblano aioli sauce, is another simple recipe that can turn any vegetable or protein into a fantastic meal! The key to this sauce is just charring or roasting the outside of the peppers.
Once you have than done you peel and puree them with a few other ingredients.
What you are left with is a smokey, slightly spicy, sauce that you can almost bathe in. You will be instantly hooked from the first bite and this will be an added recipe to your repertoire.
I absolutely love this poblano aioli on a nice piece of salmon or chicken. It is also excellent as a dipping sauce for grilled or raw vegetable platters. Or try it on a bruschetta with cheese and apricot. Here is the recipe I hope you enjoy it!
Poblano Aioli Sauce
- 4 whole poblanos
- 1 cup cilantro
- 1/4 cup pumpkin seeds
- 3/4 cup vegenaise
- 1 tsp salt
For the poblano sauce

Roast the poblano peppers until they are completely charred either on your grill, broiler, or directly on top of a gas burner. Then place in a bowl and cover with plastic for 10 minutes. Then peel and deseed the poblanos.
Place them in a vitamix with the rest of the ingredients. Puree until smooth, season with salt and set aside.
